When the body fasts, more than the metabolism shifts – the urge to move grows too. Hiking & Fasting puts that to use: six guided mountain hikes in the Alps around Bayrischzell accompany a week of Buchinger therapeutic fasting at the Tannerhof. The combination of fasting metabolism and moderate endurance activity in nature supports detoxification, steadies circulation, and fosters the mental clarity many guests experience while fasting.

The programme is not a sports camp. It is a structured fasting week with daily movement in the open air – complemented by targeted therapeutic treatments in the afternoon. Vroni Waller, a certified fasting guide, accompanies the entire process. In summer 2026.

Stay: 8 days, 7 nights
The Hiking & Fasting programme runs over eight days – arrival and departure on Sundays, without activities. In between lie five hiking days with a clear rhythm of movement in the morning and treatments in the afternoon. The duration is chosen so the fasting metabolism can fully settle in and the body benefits from the combination of relief and movement.
Five alpine hikes
Five guided hikes of around 9 to 14 kilometres through the mountain landscape around Bayrischzell. The tours lead over the Taubenstein, around the Spitzingsee, and through the valleys near Geitau and Osterhofen. Each hike lasts about five to six hours and is tuned to the fasting body: moderate, but tangible.
Therapy & medical supervision
The afternoons hold individually timed treatments: Kneipp contrast pours, fasting massage, breathwork or Trager work, bio-impedance analyses, and a closing medical consultation. The treatments support the fasting process precisely – regulating rather than demanding.

The Hiking & Fasting week

Phase 1: Arrival & easing in
Arrival on Sunday. Arriving, settling in, first orientation.

Phase 2: Check-in & start of the fast
The programme begins on Monday: an initial medical consultation and bio-impedance analysis in the morning, a fasting talk with Burgi von Mengershausen at 12. The body begins to switch over – we create the conditions so it can happen calmly.

Phase 3: Hiking & fasting
From Tuesday onwards, the hikes begin. A guided mountain tour each morning, treatments and rest each afternoon. The fasting metabolism is at work; movement in the fresh air supports the process. Vegetable broth, herbal tea, and freshly pressed juices accompany the day.

Phase 4: Deepening & regulating
In the second half of the week, the rhythm settles in. The hikes become more familiar, the body lighter, the head clearer. Treatments are tailored individually – depending on what the body needs.

Phase 5: Building back up & closing
Closing medical consultation, final bio-impedance analysis, recommendations for everyday life. The way back into eating begins consciously and quietly – so that what has been achieved lasts. Departure on Sunday.

Detoxifying Fasting Cuisine

A central element of the programme: detoxifying fasting after the Buchinger method — medically supervised, clearly structured and deliberately gentle. In place of solid food comes a precise fasting rhythm of vegetable broths, light soups, freshly pressed juices, herbal teas and water. Not "nothing," but the right thing. At the right time. With attention and quiet. A reduction that doesn't harden, but opens. And becomes surprisingly clear.

In the medical history and examination, your current state of health and your medical background are carefully gathered. Together we clarify your personal goals and derive the appropriate measures from them — a sound, clear foundation for tangible relief and lasting well-being.

Guided Mountain Hikes

Five tours through the Alps around Bayrischzell – from the Taubenstein and Soinsee via the Wendelstein to the Josefthal Waterfalls. Each tour runs between 6 and 12 km, lasts around five to six hours, and is led by Vroni Waller and Jonas von Mengershausen. The routes are tuned to fasting guests: moderate in difficulty, intense in experience. Tours at a glance: Taubenstein & Soinsee (approx. 11 km), Wendelstein tour (approx. 10 km), Gaitau & Birkenstein (approx. 9 km), Hochkreuth (approx. 6 km), Waterfalls, Nogg, Osterhofen & Melkstatt (approx. 10 km), Josefthal Waterfalls (approx. 7 km). Bioimpedance Analysis

Bioimpedance analysis evaluates your body composition. What is your water, muscle and body fat percentage? Particularly for fasters and those eating "Schlanke Tanne," a measurement at the beginning and end of the stay is valuable — it lets us see clearly how your weight loss is composed.

Detoxifying Massage with Königsöl

The precious Königsöl ("King's Oil") with more than 30 herbs and medicinal plants is intensively massaged in. Its special composition stimulates the skin's metabolism; the skin becomes silken and fresh. A wonderful companion treatment for fasters. With products from our favourite natural-cosmetics labels, Marias and Pharmos.

Kneipp Contrast Affusion

The essence of Father Sebastian Kneipp's hydrotherapy. As simple as it is brilliant. Alternating hot and cold affusions invigorate and refresh. They strengthen vascular regulation and the immune system. We begin slowly and work up to just above your knee.

Pilates for Fasters with Victoria Berg

Gentle Pilates session designed specifically for fasting guests, led by Victoria Berg. Strengthens the deep core muscles, improves body awareness, and complements the hikes with targeted stabilisation work. Complimentary for participants of the Hiking & Fasting programme.

Mieseben & Geitau – approx. 9.4 km

Guided mountain hike as part of the Hiking & Fasting programme, led by Vroni Waller and Jonas von Mengershausen. From Mieseben gently downhill through mountain forest and across alpine meadows to Geitau. Around 9.4 km with only 63 m of ascent and 125 m of descent – the easiest tour in the programme, ideal as a deliberately quiet day. Hiking gear required.

Waterfall, Nogg, Osterhofen & Melkstatt – approx. 10.5 km

Guided mountain hike as part of the Hiking & Fasting programme, led by Vroni Waller and Jonas von Mengershausen. Loop through the Leitzach valley along streams and waterfalls, passing the hamlets of Nogg, Osterhofen, and Melkstatt. Around 10.5 km with 244 m of elevation, alternating between forest passages and open meadows. A tour that captures the variety of the landscape around Bayrischzell. Hiking gear required.

Around the Seeberg – approx. 14 km

Guided mountain hike as part of the Hiking & Fasting programme, led by Vroni Waller and Jonas von Mengershausen. The longest and most demanding tour of the week: a loop from Bayrischzell over the Seebergkopf (1,054 m) with 309 m of ascent and descent over roughly 14 km. Mountain forest, open ridge sections, and panoramic views of the surrounding peaks. Hiking gear required.

Geitau & Birkenstein – approx. 9 km

Guided mountain hike as part of the Hiking & Fasting programme, led by Vroni Waller and Jonas von Mengershausen. Loop from Bayrischzell through the Geitau valley across alpine meadows and gentle forest tracks to the baroque pilgrimage church of Birkenstein. Around 9 km with only 137 m of elevation – the most relaxed tour of the week, open and calm. Hiking gear required.

Spitzing Loop – approx. 10 km

Guided mountain hike as part of the Hiking & Fasting programme, led by Vroni Waller and Jonas von Mengershausen. Loop on the high plateau around Lake Spitzing at approx. 1,100 m. Around 10 km with a gentle 155 m of elevation gain, alternating forest and lakeside sections, with views of Rotkopf and Roßkopf. A route without major climbs that still delivers alpine scenery. Hiking gear required.

Taubenstein, Soinsee & Osterhofen – approx. 11 km

Guided mountain hike as part of the Hiking & Fasting programme, led by Vroni Waller and Jonas von Mengershausen. Take the Taubenstein cable car up to nearly 1,700 m, then cross the Soinsee – a dark green lake set in a glacial cirque – and descend via the Soinalmen down to Osterhofen at 783 m. Around 11 km, predominantly downhill (approx. 1,030 m of descent), with alpine panoramas throughout. Hiking gear required; cable car fee not included.
